I am truly grateful for my loving family, including our 'Feline Four' and life's adventures! I am learning to keep the good energy flowing, even in the face of inevitable challenges; learning to co-create with the help of the wisdom of the Universe and never giving up!! Learning healing Reiki has been a gift. I hold a M.A. in Educational Psychology but experience is always the best teacher. Life is every changing process where the quality of the journey is more important than the destination. What goes around, comes around sometimes in surprising ways - so stick to the high road!
My favorite things to cook
Oh . . . no contest: Deserts, Muffins & other breakfast goodies. However, I am learning to enjoy cooking veggie dishes and main course entrees, like Salmon Souffle. 'All Recipes' is a favourite haunt of mine to sample and surprise my family with new dishes. I really appreciate the helpful comments posted by others, which I always review. Thank goodness, my Mom is the chef in our family!!

Mom's baking and her traditional recipes - hard to beat; some of which I will contribute to this site - a New Years, 2009 resolution!! Hmmmm starting with the incredibly delicious Chocolate Cake with Eagle Brand Icing and a layer of Peppermint Butter Cream Icing underneath - drooling yet????

Fluffy Whole Wheat Biscuits
Thanks a bunch, fellow Canadian, Ruth Ann! These bisquits were easy to make and GOOD. I used the food processor to cut in the butter, but make sure it is cold. Also if the dough gets a little sticky I just flour my hands. Mae twice: once with garlic powder and the second with cinnamon. Fun to add flavouring as others have suggested. I've made them twice

Mom's Zucchini Bread
Happy New Year 2010 everyone . . . & special thanks to V Monte for this melt in your mouth Zuchini Bread recipe - now I know why the RAVE reviews - well deserved!! This is now my favourite Zucchini Bread Recipe that I can add optional fruit when desired. Everything is just perfect as is. When people make too many changes I wonder why they cook a recipe! The only comments I will add are based on optional preferences (e.g. more cinnamon) and a few baking tips for others like me that are not overly experienced in the kitchen! I made 1 loaf (cooked: about 45 - 50 mins) & 5 big muffins (cooked: 25 - 30 mins) & baked on the MIDDLE oven rack & watched like a hawk so as not to overcook. Added tin foil loosely around the loaf pan edges in the last 15 mins. while the middle finished cooking. Don't worry if he dough seems very thick before the Zucchini When you add the Zucchini NOT drained as others suggested (I added 3 cups & about 8 oz. of crushed pineapple) . . . . . then the moisture kicks in perfecty & becomes very pourable. Mom and I just devoured two delectabe muffins with our coffee this afternoon. Dinner will have to wait!! Guess what we're having for breakfast LOL!! Next time I double the recipe.

Pineapple Sweet Potato Souffle
We eat baked sweet potatoes (yams) year round at our house. How can anything so good for you taste so good! I baked this recipe tonight and wasn't disappointed! This was a 'delish dish' souffle . . . high fives cinnalady! My personal preference was butter instead of margarine - everything else was perfect. The pineapple topping was really good! Note: I believe there is a typo under Directions #2: It reads "3 eggs" for the souffle; I believe it should read 2 eggs as the Ingredients call for plus the 1 egg to mix with the pineapple topping. Is this correct cinnalady?
