Pesto Polenta Lasagna
Very easy and tasty, and the kids loved it. I smashed up the polenta instead of slicing it, making it a little more like a casserole.

Pine Nut Rice Soup
It didn't get thick enough, but you can add rice flour to make it thicker. Also, honey makes it tasty.
