Aunt Carol's Apple Pie
About this Cook
I am a book designer, illustrator, and writer. I'm the author of "Open Your Heart with Pets: Mastering Life through Love of Animals."
My favorite things to cook
Rice with stir-fry veggies; pie; bread; made-up cookie recipes; dinner for friends. I also love to make soup.
My favorite family cooking traditions
My mother was well-known for her apple pies and every Christmas she made Swedish Tea Rings, which I now make also. She also made excellent "Chili Spaghetti." My grandmother made exquisite cinnamon rolls and prune bread and my grandfather made pancakes and molasses cookies.
My cooking triumphs
I made a really pretty cake my senior year of high school. Also, made a nice cake for my son's 21st birthday. I am usually able to make a nice Thanksgiving dinner for family, and the turkey comes out just right.
My cooking tragedies
One time when I was a teenager I made a chocolate cake; the icing was too runny and the layers went a'slidin'!

Aunt Carol's Apple Pie
This pie was delicious! I substituted Spectrum organic shortening (0 trans fat) in the crust. I used light brown sugar as I couldn't find the brown sugar specified in the recipe. But it came out perfectly. It didn't overflow into the oven either. I also brushed egg white on the top crust, then sprinkled with sugar.
