Super Fajita Marinade

loved this marinade! another freezer meal attempt - tossed the chicken breasts and marinade in a freezer bag and froze. took camping with some fresh veggies. thawed and tossed all on the grill to cook then sliced and the whole family raved - couldn't even tell the chicken had been frozen!

Grilled Shrimp and Apple Skewers

wow! made it as a freezer meal - tossed it all in the marinade in a freezer bag and froze it. took the bag camping - skewered the shrimp and apples when thawed and grilled. it was delicious! apples were a little soft to thread because they had been frozen, but the final results were fabulous anyway!

i'm not a pumpkin fan but this was pretty good ... my rating probably reflects that i still don't really like pumpkin (and my guests weren't big curry fans). everyone enjoyed the soup, but not enough to make again.

Chilled Cucumber Yogurt Soup

i really enjoyed the soup and will make again when i need to use up some cukes! hubby didn't like it so much so i'll be making it just for me which is why i only gave 4 stars. would love to try the avocado next time or a dollop of sour cream. won't bother grating the cuke or mixing it in a bowl next time - just dump all ingredients into the blender for less cleanup!

Black Bean Soup II

the first time i made this, it was fabulous ... but i can't remember if i followed some of the suggested modifications. second time i made it ... it was watery. would definitely use a broth instead of all the water next time. maybe cut down the liquid in general. definitely more garlic and cumin - but my family loves those.

it's a good start ... but i still haven't found my perfect stroganoff recipe. 4 stars because i made it as written and while the best recipe i've tried, it's still not perfect. will play with this recipe more and try to perfect :)

Chicken Cordon Bleu II

this was absolutely fabulous! stuffing the breasts is a bit of work, but we double (or triple) that part of the recipe (which is only a little bit extra work) and freeze the extra. then next few times we make it, just thaw the chicken overnight, cook as directed, and whip up that amazing sauce!

absolute decadence! much easier than expected and delicious! next time i make it, though, i'm going to try cutting out some of the butter - incredibly rich and amazing, but a bit over the top for the average weeknight dinner. :)
