Pasta with Scallops, Zucchini, and Tomatoes
This was excellent. I had to make some changes to go with items I had. I added diced red pepper,and a small bottle of marinated artichoke hearts, and I cut up tomatoes (regular fresh tomato) and left off the zucchini as I didn't have any. Followed the rest of recipe and it was so good I couldn't believe it. I will be making this many more times as it was easy and quick to make expecially if you have unexpected company. Made a salad to accompany the meal.

Creamy Rice Pudding
This is a very nice rice pudding. The only suggestion I have is to cut down on the sugar. I did have to use instant rice which I precooked following the recipe as stated. I plan on using it cold and will at that time add cinnamon.

Peach Berry Cobbler
This came out so delicious! It was not too sweet like most bought cobblers. I am not a great baker but this was easy to bake. My peaches were very juicy and I should have added more cornstarch but that is the only thing I will change if I again have wonderful juicy peaches. Thank you
