About this Cook
I can never just FOLLOW a recipe! I must force myself to read through and actually follow all instructions in a recipe. I always add a little of this, substitute a little of that and I am notorious for skipping steps to make something a little faster and easier. I must write, climb, create, read, be immersed in water and be outside regularly.
My favorite things to cook
Anything quick and easy. I will gourmet cook on occasion, but my specialties lie in quick chicken dishes cooked on the stove top.

Chicken Florentine Casserole
Did as another reviewer suggested and cooked chicken in the leftover bacon grease. I also didn't understand why it's called a casserole. I added my own noodles to make it a casserole, topped with bacon and mozzorella and baked. Yum!

White Bread For The Bread Machine
Oh YUM! I read through a lot of reviews and and made the following changes based on what I read: Added 1/2 tsp each garlic powder, oregano & basil. Added 1 tsp dried onion. I used olive oil & all-purpose flour in place of the recommended oil & flour. And I also used 1/2 cup of whole wheat flour in place of the white. Set bread machine to dough cycle, removed dough ball and smoothed into loaf pan. I baked it 375' for exactly 25 minutes. This vegan bread is just perfect. The herbs I added gave it a slight hint of flavor without over-powering the delicious bread flavor. The consistency is similar to our local bakery's bread and it's great for sandwiches, just a slice w/ butter, dipping in soups....

So delicious. I've never had these before so I had no idea how they are "supposed" to be, but they were so spongy and delicious. Great dipped in coffee.
