Beaker's Vegetable Barley Soup

I added extra of the spices, and I still felt the flavor was somewhat bland/boring. Sorry, I just don't agree with the other people's reviews on this one.

Baked Tofu Bites

This was great! i followed other people's advice, and made sure I pressed the tofu between two towels for 20 minutes or so. And then I let it marinate for several hours (didn't count how long, but just put in the fridge and let it marinate until I was ready to cook dinner). It was plenty flavorful. Thanks!

Vegan Chunky Chili

An excellent recipe, we didn't miss the meat at all, it was plenty flavorful. I didn't have a whole lot of time to make the recipe as stated. I used a can of red kidney beans, a can of white beans, and cooked the lentils (they cook fast) instead of soaking overnight. I used a can of green beans instead of making fresh, and used canned diced tomato. So I eliminated steps 1 & 2. I followed the rest of the ingredients, and added some fresh garlic for extra taste. Then I realized that I did not have time to cook it on the stove, since I had to take my daughter to swim class. So instead of simmering on the stove, I threw all of the ingredients into the crock-pot, and set it on "low". When I got home 2.5 hours later, it was perfectly done. And very tasty too, thanks for the healthy, yummy recipe!

Homemade Black Bean Veggie Burgers

As good, cheaper and healthier than grocery store veggie burgers. I made my own black beans instead of using canned. Added eggs, and extra bread crumbs, and carefully squeezed excess water out of the veggies. No problems with the burger staying together for me.

Angel's Pasta

This turned out great. After reading some of the reviews below, I decided to use canned diced tomatoes instead of fresh (seemed like the people who used canned were happy with their decision). Fresh basil is key, don't use dried. Other than that, i would describe this as a simple & healthy, but tasty dish. I served it up with home-made bread and a salad.

Exquisite Pizza Sauce

Excellent sauce, perfect as-is. The anchovey paste is important as a flavor, and sauce does not taste fishy with the paste included.

Awesome and Easy Creamy Corn Casserole

Excellent recipe. Instant success on my first try (at thanksgiving), and it disappeared really quick. I added 1/2 cup sugar. Didn't add all of the can of corn, maybe used 2/3 of the can. Baked it for an additional 10 minutes (so a total of 55 min) than called for in the recipe.

Broccoli Beef I

Flavor was good, but I did have to add spices. As noted by other reviewers, I doubled the ginger and used 3 cloves garlic. Used 4 TBSP soy sauce, and added onions too. I highly recommend adding a half tsp. of red pepper flakes, the recipe is way too bland without the extra spices and the red pepper.

Spinach and Mushroom Quesadillas

Delicious. I added onions to the mixture, it makes a difference. I didn't use the oven, I skipped that step. Instead, I just took two skillets, and warmed up one side of the the burrito skins. Flipped the skins over so the warmed side is up, and then loaded the filling. Folded it in half, and then it was done. I didn't need to use oil with this method, since the skillets are non-stick, though cooking spray might add a little flavor.

Coconut Tofu Keema

Flavor is excellent. I did not use 6 cups tomato sauce, and I'm glad I didn't, I think that would've been overkill that would drown out the coconut flavor. I used a 14 oz can diced tomatoes, and half of a 14 oz can of tomato sauce. 1 tbsp of pepper paste is plenty spicy, if you like it mild, add less. I have to say that this recipe makes a large volume, I would have preferred it to be half the quantity, had too much leftover.

Tofu Stroganoff

I felt the original recipe is bland. I added a little extra sour cream, and then after tasting, added some salt and cayenne pepper, and extra garlic. That helped, but I still felt it lacked excitement. My husband added even more cayenne pepper and some garlic powder and then said he really liked it. So given that the recipe seems to need serious tweeking to taste good, I give this a 3. i will probably try this again, but play around with the recipe some more, maybe try tomato paste like a few others did.
