Brazilian Fish Stew

A nice, flavorful recipe if you're looking for something a little different. If made with tilapia, the fish taste isn't very strong, compared to the coconut milk. Definitely don't cut down on the amount of spices - the amounts listed are really the bare minimum.

Fast, easy, and delicious. They are a bit crumbly, even if you boil the caramel mixture for a few minutes, but it's ok. Just be sure to cut into very small squares, since they're incredibly rich!

yum! Made it as written, except left the sesame seeds until after it was cooked. Wrapped it in lettuce leaves, with a spoonful of brown rice. What a great dinner!

Great flavor! I make it with 100% juice, so it doesn't have any added sugar or corn syrup. It's great to have a "healthy" drink option.

Tilapia Soft Tacos with Chipotle Cream

Amazing, amazing, amazing! I just changed a few minor things. 1) Added cilantro with the fish (instead of with the spices), 2) used mayo instead of sour cream and only used one chipotle pepper, 3) added chopped romaine, avocado, and fresh pico de gallo. What a simple, fast, delicious, and healthy meal.

Salsa Chicken Skillet

A nice, satisfying meal. I used a tomatillo-cilantro salsa and thought the flavor was excellent. I served the sour cream & cheese on the side - thought this dish was good enough without adding the extra calories.

Grilled Fajita Steak Salad With Pickled Pink Onions

Great recipe - the flavors blend beautifully. I made it as written and added chopped tomato and avocado. My only complaint is about how tart the lime-garlic dressing is when you get to the bottom of the bowl. If you didn't drain the dressing off the arugula, you were in for a sour bite. Next time, I'm going to try a lime-cilantro vinaigrette instead.

Veggie Quesadillas

Nice vegetarian dinner. We liked the quesadillas (with some chili powder added to the veggie mix for some kick) but had a bunch of filling left over, and decided to eat that by itself. I cut up an avocado, added that to the mix, and then just warmed bowls of the veggie mix with avocado and topped it with some chipotle salsa. No cheese - no sour cream - very low fat, and fantastic flavor!

Ginger-Cabbage Salad

This salad is pretty good, if you follow the other reviewers' suggestions. I made it as-is, and found it quite bland. Then I added 1/4c olive oil, 1/4c soy sauce, and 1/4c sugar, and the result was much better. It tastes like those Asian-ramen noodle salads, just without the fat and sodium added by the ramen noodles!

Beet Salad with Goat Cheese

Fantastic salad! The candied walnuts turned out perfectly - not too hard, not too sticky, and oh so easy. I buy the vacuum-packed, pre-cooked beets in the produce section of my supermarket, which makes this a snap to prepare.

Sushi-Inspired Tuna Salad

This is a great idea, but it definitely could use a little bit of crunch. Finely chopped cucumber, celery, and/or nuts would fit the bill nicely. I took a cue from the picture and served this in Nori rolls with some sushi rice. Will definitely make it again, with some extra veggies thrown in.

Chicken and Asparagus Fettuccine

Nice dish. The asparagus definitely needs to be cooked separately (I steamed mine in the microwave for 5 minutes). Also, the sauce is pretty runny, but I prefer it that way - it doesn't stick to the pasta as much, so you end up ingesting less fat than with normal, thick alfredo sauce.

Swedish Cinnamon Twists

The dough was fabulous - perfectly soft & pliable. The end result just wasn't quite what I'd been looking for. It needed a much higher filling:dough ratio. Make sure not to roll the dough too thin, and don't skimp on the filling - needs to be at least 1 packed cup of brown sugar and lots of cinnamon. Some finely ground nuts would also be a nice addition. Note that the glaze is different from the typical frosting "drizzle". It works fine - perhaps better if you try for full coverage rather than nice patterns.

Beef and Lentil Soup

A fantastic combination! The beef and lentils go so well together. This recipe is a real winner - no changes needed, although I substituted beef broth for the chicken broth like many other reviewers. As with many soups/stews, it's even better the second day.

Black Bean and Corn Quesadillas

Much milder than I had expected. I followed the recipe as written, adding the brown sugar, medium salsa, and the red pepper flakes, but it was still mild, with more of a sweet than spicy taste - probably because of the supersweet corn. It still tasted good, just needed some extra heat.

Fabulous! I added garlic when sauteing the onions, plus a mix of Italian spices. Only took 25 minutes of baking in the oven, plus 5 minutes with the added cheese.
