Ethiopian Chicken
Two variants -- One time I ran short on soy sauce and went with 1/3 cup soy sauce and 1/3 cup white wine; family loved it--we call it Drunken Ethiopian Chicken. Also have used it on boneless thighs, just saute the thighs with the onions and then pour the sauce over and reduce, worked great!

Modenese Pork Chops
Family absolutely loved this. I did the steamed broccoli in the pan juices for about 5 minutes and it was equally loved. There was literally not a bit left over and my daughters (9 and 14) were still asking for more.

Honey-Ginger Grilled Salmon
Very good. The kids loved it, especially cooked just a wee bit longer so that has just a tiny bit of crunch.
