Best double chocolate cookie ever! I couldn't make more fast enough. I too followed others' suggestions of adding the veg. oil, except I used Canola oil and vanilla. Great and easy recipe. Definitely a keeper. Thank you!

Black Beans and Rice

I too tweaked this recipe. I added a can of diced tomatoes, 1 tbsp of lemon juice, chicken broth, jalapeno sausage and ground meat. It was delicious and family loved it!

Good Old Fashioned Pancakes

These were good. They didn't cook up as fluffy as Bisquick mix, but they were really good. My daughter liked them better than Bisquick. She could taste the difference. I did tweak the recipe a bit. As suggested I reduced the salt to 3/4 tsp. I also added an extra tablespoon of sugar, 1 tsp vanilla, and 1 tbsp of lemon juice. I topped each pancake with a slither of butter as they came out of the pan.

Ultimate Twice Baked Potatoes

LOVE THESE!!! I'm sorry I didn't rate this recipe sooner. I've been using this recipe for 2 years now. They have become a staple at my Thanksgiving table. My hubby calles them potato boats. I usually have to double the recipe if I want any leftovers. They are absolutely delicious! Oh, I almost forgot; as suggested I did rub olive oil on the skin and dusted with a little bit of Kosher salt. Nothing was wasted on this potatoe. Everyone ate everything, including the skin.

Easy Peach Cobbler II

This was wonderful! My husband loved it and asked when am I going to make it again. My father-in-law had no idea I used bread. The only thing I did was double the batter because it just didn't seem to be enough, reduced the sugar to 1 cup, and I added a 1/4 tsp. of cinnamon.

Artichoke & Spinach Dip Restaurant Style

Absolutely wonderful! I used the Alfredo sauce with Sun dried tomatoes in it. This is also wonderful topped on a baked potato. Definately keeping this one! : )

American-Italian Pasta Salad

I made this dish the other day and we all loved it! My husband does not like cold pasta, but he liked this. My 3 year old even loved it. I did use 1/4 cup of milk instead of the 2tbs and along with the salami, I added grilled chicken cut up in pieces. I made it Tuesday night, it's still nice and creamy today, Friday. I am definately keeping this recipe and taking it to a picnic we're having at the end of the month. Thank you so much for this recipe!
