These are awesome! I hosted a huge baby shower and made about a hundred. Following the advice of many others, I split the biscuits in halves using my thumbs. I also rolled the biscuits out a little. Had to go easy on the filling b/c my first batch bubbled over.
I did make these about a week in advance but they froze and reheated with no problem. The only turn-off for me was they were a tad bit greasy. (But who said it was a health food, right!?) Also tried this with turkey bacon and it wasn't as good. The turkey bacon added a sweet taste that just seemed to clash with the other flavors.
Overall, these are worth the time and effort as a finger food. I will be saving this recipe but in the future, I will probably make them in a regular sized muffin tin.
