Light Oat Bread

Reviewed: Jan. 2, 2010
Delicious, quite moist and almost seemed not quite done. Next time maybe I'll use the medium instead of light setting. Am going to try with whole wheat flour next time as well.

Danish Potato Soup

Reviewed: Nov. 1, 2009
I pretty much doubled the recipe: 4 Qts Water, 6 potatoes, 1 large regular onion, chopped into tiny pieces, 5 stalks celery along with the hearts and greens, about 3 cups of coleslaw mix cabbage with the carrots in it, 1/2 C Minced Parsley; I made the mistake of stirring 6T Flour with 1/2C Heavy whipping cream - it turned into a dough and when added to the soup broke into tiny dumpling-like pieces that eventually disintegrated when I added the cream at the very end. Won't do that again. I ran out of nutmeg so had very little to sprinkle; more would have enhanced the flavor quite a bit. This was a delicious soup and will be made again. Very easy but time-consuming.

Mushroom Sauce Baked Pork Chops

Reviewed: Oct. 23, 2009
I followed other reviewers and doubled the soup and only added 1 can of milk...sauce was a good consistency but lacked flavor in my opinion. Denny said it reminded him of scalloped potatoes; the potatoes took a long time to cook. I cooked the whole thing in a 2quart casserole and it overflowed; I cooked it 1 hour covered and 1 hour uncovered - by then the small boneless chops I made were dried out. Not a hit for me.

Salsa Chicken

Reviewed: Oct. 22, 2009
The chicken breasts were still frozen so I cut them up in small pieces, spread some home made salsa in bottom of glass casserole, seasoned the chicken with home made fajita/taco seasoning and placed over salsa, then spread the remaining salsa over the top. I baked it at 350 for about 30 minutes, then served over white rice and sprinkled grated cheese over the top with a dollop of sour cream and Frank's Hot Sauce. Delicious, quick and easy. Everyone liked it. Kyle 4 starts, Denny 4-1/2 and me 4-1/2.

I put too much cilantro in, I think I'd like it better without the cilantro. Very good though.

Tangy Barbecue Sauce

Reviewed: Sep. 29, 2009
I eyeballed the quantities and used this as a base...I added the drained beef broth I added to the pan when roasting the ribs, apple cider vinegar, honey, ginger and cinnamon. The cinnamon was a bit over the top, but it was still good.

Skillet Chicken Cordon Bleu

Reviewed: Sep. 22, 2009
Oh Man! The Whole Family Loved This Recipe! But like Kyle said, it's very rich. Sliced breasts in half lengthwise, rolled big slices of swiss in deli ham slices and inserted; closed breasts, salted and peppered on ea side, floured both sides and fried in butter in cast-iron pan. Browned both sides and overcooked them. Doesn't need 30 minutes frying time. Put on warm platter in warm oven while I made the sauce. Served with Red potatoes in butter and parley. Next time will serve with salad or something very light.

I didn't have enough Soy Sauce, so used 1/2 Lite Soy and 1/2 Red Cooking Wine; used Lakeside Hot Honey Mustard. Mmmm Good!

Adel's Red Wine Steak Marinade

Reviewed: Aug. 23, 2009
I used sherry and low-sodium soy sauce and thought the taste was lacking, especially in salt content. Next time I'll add some salt or use regular soy sauce and a better red wine. Will also let sit in marinade overnight instead of a couple hours.

Chuck Wagon Hash

Reviewed: Aug. 5, 2009
I cooked the onion with the beef; I added the seasonings to the beef and onion while cooking...I did add a little salt...wasn't enough in my opinion. Next time I'll change the garlic powder to garlic salt. I used a 14oz. can of Green Beans, 1+ C of shredded Monterrey Jack, which I think went well with the dish. I will increase the cayenne pepper flakes to 1 t. and maybe use Pepper Jack cheese instead. I liked eating it as a dip with Tostitos.

Easy Chicken Tetrazzini

Reviewed: Jul. 30, 2009
I wanted to give this three stars, but in all fairness, I deviated from the recipe which may have caused the lower rating. I believe this could be a four-star recipe with the right changes. I don't think it will ever become a 5-star, but I'll keep trying.

This was a yummy, quick meal. I'd use a Bay Leaf as well to give it more of Mom's Old-Tyme Beef Stew Hash taste.

Chicken Fajita Melts

We had dozens of soft sandwich rolls leftover from a party and so we made this and put it on the half-slices. Toasted them first. This was delicious! And I will be making these to freeze for easy snacks.

Soupy Joes

Reviewed: Jul. 5, 2009
I used a can of cream of broccoli soup and it was delicious. I also added some chopped celery to the hamburger and onions. I salted the beef while it was cooking and did not add extra salt to the sauce. I served open-faced, piled on the toasted bun halves and with a salad. The variations are endless...I want to try cream of onion and cream of mushroom

Marinated Pork Roast

Reviewed: Jun. 29, 2009
Very yummy, I had to bake it because we were out of charcoal, but if I hadn't overcooked it, it would have been perfect. As it was, it was still delicious. I used the leftover marinade as a stirfry for leftover cooked rice and lots of frozen and fresh veggies.

Quick Cherry Turnovers

Very quick and easy snack...only tried it once so far and learned a lot about qty and working with the dough. I too want to cut up the whole cherries so they're not so unwieldy.

Sherry Sour Cream Chicken

Reviewed: Jun. 28, 2009
I used 1-1/2 C Sour Cream and 1/2 C Red Wine as I didn't have enough Sherry. Didn't use Rosemary or Thyme...out of garlic and garlic Powder or I would have used it...did have onion, so browned chicken with onion. Covered in oven, not sure if I was supposed to? Very good - served on bed of rice and drizzled lots of gravy/sauce over. Mmmmm

Pork Fried Rice

Reviewed: Apr. 21, 2009
I gave this 5 Stars because I thought it was the best stir fry I ever made. I used some pork chops that Denny cut off a large Pork Loin; used frozen corn, green pepper, carrots and green beans from our garden; used fresh broccoli, onion, celery and garlic; used about 2T of chopped frozen Red Hot Chile Pepper, was very spicy, but yummy! Because I had so much food, I used more than double the cooked white rice and seasoning. Pushed veggies aside and cooked egg in pan like others said to do.

Dave's Mocha Chicken

Reviewed: Apr. 18, 2009
We used low sodium soy sauce for the first time ever on this recipe and it still was salty enough - would not recommend using regular soy sauce as I think it would be too salty then. We covered the chicken and should not have; the sauce never thickened up. Will make again, very good.

Delicious Ham and Potato Soup

Reviewed: Apr. 7, 2009
I used other people's comments and made this with a leftover hambone from a spiral ham Mom gave me. I boiled the ham bone in 8 C of water with celery and onions and carrots (too soon for the carrots, they fell apart and speckled the soup, which was nice too). Cleaned almost 2 C of ham off the bone and added with about 10 potatoes peeled and diced. This was good. Used a whole Onion, will probably cut that in half next time.
