Cream Cheese Frosting I

This was good, needed a 1/2 tsp of vanilla in it, and 1/2 more confectioners sugard. But other then that a good basic recipe.

Glazed Dijon Carrots

My kids were liking this recipe as for myself as well. Hubby was the one that said, the flavors were overpowering for him....I couldn't see it. But my kids were very well won over on this one. And it thrilled me....and that's what really matters. Happy to make this again.

Traditional Mashed Potatoes

This was okay, not great, but okay. I had to doctor it up with more salt and add pepper. I guess you can say the southern in me came out, for I have to have pepper. But it's a good base recipe.

Rempel Family Meatloaf

My family really enjoyed this recipe. I did a Easter theme meatloaf, and really really got the jaws dropping with my kids. I guess they not only enjoyed the meatloaf shaped as an Easter Egg, but loved that it was really good, tender, not dry. This gets my 5 star all the way.

Ricotta Cookies III

Don't have anything bad to say about this cookie recipe. We just loved it. Held shape well during and after baking, didn't spread, puffed nicely. Flavorful, moist, light and airy, soft, and stayed soft even the day after baked. These didn't last long at all. Yummy!!

Colored Sugar

This was way to easy and fun, especially when you have kids to get involved. I used zilpoc baggies and got my kids to shake them up, and they had fun doing so. But trick is, when using liquid food coloring the darker you want your sugar to be, the more drops you put in with the sugar. Still quick, easy, simple, and cost effectively cheap...no more buying the colored sprinkles when I can do it myself...even using decorator's sugar crystals work well. 5 stars all the way.

Macaroni Tuna Casserole

Well I soo goobered when I made this simple recipe. I looked at a few of recipes for Tuna Casserole for kids dinner and went and made this one...which had planned to do. I had mac and cheese left over from the night before and thought I'd heat it up on the stove to get it started.....well read the instructions really fast, put it all in the stove pan, including the cheese and thought man...it's too thick...when I realized opps cheese on top silly. So I added more milk to compensate my mistake. Plus added 1/2 cup each of peas and corn because of the liquid content. I then put it all in the baking dish, added cheese on top as directed even though it was mixed in already---it worked. Then I put French Fried Onions on top during the last 5 or so minutes in baking-----Oh it turned out wonderful.....Kids were doing the mmm mmm mmm mmm good mom! So it was a happy screw up that didn't get wasted and love the cream of celery in this dish. Will make it again.

Better than Sex Cookies

Well...These were a good cookie. However, I had to make 2 batches. The 1st batch followed it to a T and my cookies were slightly flat and needed a little something, but couldn't put my finger on it. Went back and looked at some other reviews and made the 2nd batch. I took the white sugar decreased it to 1 1/2 cups and added 1/2 brown sugar. I increased the vanilla extract to 1 1/2 tsp, increased the flour to 3 cups and used 12 oz white chips(works out to 1 3/4 cup--one bag) and 6 oz Macadamia baking pieces dry roasted. I didn't see the need to measure out 4 oz---I like nuts so I used the whole bag. With these adjustments, I got a nice flavorful cookie as I think was intended, and still slightly soft in the middle...I have a gas oven so 8 1/2 to 9 minutes was just perfect. Even though the first batch was decent, the 2nd batch was excellent..I couldn't rate this a bad recipe at all just some minor help. Will make this again with the adjustments.

The Best Chicken Fried Steak

Well this went soo fast, I was able to find my family of 6, this meal....was totally excellent. I used pork cubed steaks...and it worked soo well. All gave a 5 star all the way. The gravy the 1st time rounded didn't work right. Was way to milky and thin. So I dumped the batch and started again. What I found it needed was more flour and reserved grease...double what it called for, slightly less milk about 1/4 - 1/2 cup. But all in all it was great. Even with using pork and not beef....Will make again with beef.....Thanks

Cheese's Baked Macaroni and Cheese

I followed this recipe to a T. However I had mixed reviews from everyone at the table. Hubby liked it, my kids were harder to please on this dish...but the one thing they agreed on was they didn't care for the bread crumbs. Maybe use a lot less then a whole cup. And maybe Panko bread crumbs. The bread crumbs could have soaked up too much of the creamyness to this dish. 1/2 cup or less probably would have been fine. And the kids didn't care for the kielbosa in it either...which I found to be strange because they love kielbosa. I thought it had a nice flavor overall, but agreed to much bread crumbs. If the kielbosa would have been left out I feel they would have enjoyed it better. One child, who will eat almost anything, said it tasted funny and doesn't want me to make it again...Hubby wants it again. So this review on rating it has been very difficult. I will say I'll attempt it again, with some different modifications, to see if it suits everyone.

Sopapilla Cheesecake

OMG!!!! FABULOUSS!!! I doubled this batch, because hubby brought home 4 guys from his unit for lunch. So I used a jelly roll pan, it didn't fit the way I wanted, soo I patched in the cresent roll dough, 2 rolls on the bottom. Then I put the cream cheese mixture on top of that, I thought I had to much as left out about 1/2 cup--next time, I'll put it all in. Then I looked at the recipe and doubled the butter----and then didn't needed it all of it, 1/2 cup of melted butter is well plenty, I used a 1/2 cup of sugar with 1 tbsp of cinnamon, and mmmmmm!!!!!! I poured it all on top of the brushed on butter and baked it...I can't tell you how wonderful and crispy the top of this dessert was, it was soo creamy in the middle. There was only 1 piece left when that group of Army guys left my house....And they had 2nds!!!!! Amazing an A+!!!!

Pico De Gallo

To be fair. I did make this recipe with the guidelines. I didn't have a medium tomato, I had Romas. I used 7. I seeded and removed the membrane from 5 of them, and the other 2 I used the seeds and membranes for the "juice factor". This recipe, was good but as with the other comments, I folded....it did need fresh lime, and more of a kick and a bit more heat, to our liking. So...here's what I did. I used the Romas, as mentioned. I used 5 springs of cilantro, 1 large jalapeno pepper, seeded and membrane removed, juice from 1 large lime and 1/2 tsp cumin, as well as the correct measurements of the other ingredients. I give this an actual 3 star, but with the modifications I did, it was a 5 star, soo to be fair, I am giving this recipe a 4 star, and will make again, with modifications.

Spanish Rice II

I made this, and it was fabulous!!! I did however follow the suggestions from Jodi Lynn.....And this recipe was awesome. This was a hit with the guys from my husband unit. I doubled the recipe and the guys put away a batch and a half. Hubby said it was right on the money..... Every suggestion that Jodi Lynn made to this recipe, was right on point. I used bacon grease instead of vegetable oil. Chicken Broth instead of water, added 1/2 tsp per batch, which was 1 tsp. And I saute'ed the onion and bell peppers with fresh minced garlic before adding the rice to brown with it..So far this is to be the favorite Spanish rice recipe yet.......;-)

St. Patrick's Colcannon

Every Ervery Good...I thought at first my head of cabbage was way to much for the 3 pounds potatoes.....nope worked out very well. I love this dish....My neighbors as well. I'm not going to count my son on this, we already new he doesn't like corn beef. But it was superb!!!

Baked Potato Soup

This recipe, was a sad but good day for my beloved 2 1/2 pound "Poo-tater". His life ended the moment I began making this recipe. This was a very good recipe. I have to say, he was the only potato that was invited to this soup-fest. This was a very creamy light soup. The niceness of this is that the bacon grease helps with the flavoring with the onions and garlic. The cheese was a very nice add with the bacon crumbles when serving this up. I will make this again.

Corned Beef and Cabbage I

My husband and I enjoyed this very much. Our kids had never eaten Corn beef, so they were on the fence, however for them. They loved the veggies very very much. I placed this in the crock pot/slow cooker all day. I used a 6qt on high. My pot was really full so the cabbage I placed in 1 1/2 hours out from serving dinner. All the veggies were soo good. The meat was very tender, flavored well and soo easy to carve up for slices. Will make this again for hubby and I.

Bananas 'N' Cream Bundt Cake

My family really like this. The smell was soo comforting, warm and inviting. My neighbor came over for something and said he'd like to stay for dinner and dessert, well it was really good, simple to make and will diffently make again.

Cheesy Chicken Poblano Chowder

I had a small bowl of this, while my hubby and I mean this when I say that, he went back 3 times.....That is right. My dad called and said he had the best Cheesy Chicken Poblano Chowder in Donna, Texas..Could I find a recipe for one. Well I found this one and man let me tell you, It was soo easy to do. The only difficult part was peeling the chard skin off the peppers, and that wasn't that hard at all. The flavors at 1st, when making them, was--hmmm,okay where's it at, an the moment I put in the spices--MAN ALIVE!! The Cumin is spot on and I wouldn't change a thing. Well maybe add more Pepper Jack Cheese like a 1/2 cup more. Other then that, not a thing....Lovely Lovely!!! My mom will be making this for my dad....I'm bowing at the presence of greatness in this recipe. Yummy!!!!

Hearty Lasagna

This was a simple recipe, how ever it lacked some spices. I made a 2nd batch after making the 1st one to a T. So 2nd batch with my tweeks were yummier. I added 1/2 cup of shredded Parmesan Cheese to the ricotta along with 1/2 cup Mozzarella cheese, 1/2 tsp salt, 2 tsp dried parsley, 1 tsp dried basil, 1/4 tsp black pepper. I also increased the ground beef to 2 pounds and added 2-3 cloves of minced garlic and increased the jar of sauce to 2. We loved the 2nd batch better then the 1st. It was much more meatier and filling. And followed the instructions on the basic set up. But will agree that it is simple to make and the cost is better then buying a pre-made frozen lasagna any day.
