I am a single 67 year old woman. I am retiring 12/31/07. This will be my 3rd. time to retire. I worked as a Respirtory Therapist in California for many years before moving to TN. I have worked in sleep medicene as a Polysomnograher since 1995. Retired in 2003 then worked 3 months as 911 operator. Quit that job as I did not like it. Got this job in 2005. I am the Technical Director of a free standing sleep center in Mt. Juliet,Tn.
Have Parkinson's Disease so getting harder to work.
My 49 yr. old disabled daughter lives with me. I have a 34 yr. old son who is a graphic designer who loves my cooking and visits a couple times a month (to eat). He lives in Antioch,TN.
My favorite things to cook
My favorite things to cook are Chorizo tacos with celantro, onions, sliced avacados with lime squeezed across the ingredients on corn tortillas.
I also love pork neck bones with red beans and rice and mixed greens.
These are my two favorite meals and my friends love them too.
My favorite family cooking traditions
No real traditions for my family. My grandchildren live in other states.
My cooking triumphs
Well, I think every meal is a triumph. I have to sit a lot while I cook so it takes me some time to put a meal together.
One of my best triumphs was an apple pie I made from scratch and used Splenda brown sugar. I am diabetic so I look for ways to use the Splenda. They have a great web site with many recipes. They use white sugar in their recipe but I subsituted with the brown. This is one of my most requested desserts.
My cooking tragedies
I have trouble making many things. One is a good shepherds pie.
I also tried to make fudge which is always a diaster for me.
I need a non-cooking recipe. I had one years ago that was great made with powdered sugar & peanut butter that I lost. If anyone has such a recipe please pass it along.
