Ginger Beef Stir-Fry

Mixed cornstarch with beef and deep fried. Then added it to veggie, sauce mixture for a crunchy texture (more like Calgary ginger beef). Hint for extra CRUNCHY deep fry twice - once to cook and then a second time once you're ready to mix everything together (also deep fried a chopped up green chile pepper). Yum!

Quick and Easy Brownies

Yummy. Added only 3 eggs, 1/2 cup butter and 1/2 cup applesauce and cut down the flour to 1 cup for less cakey like brownie. Also used brown sugar instead of white.

Beefy Chinese Dumplings

Pretty easy but took time filling. Sub'd pork for beef and browned it with onion and then added rest of ingred's also added green chilles for a little zing.

Slammin' Salmon

Very easy and yummy. I've baked this in the oven 3 times now and broil it for a couple of minutes towards the end. Waiting for bbq season. I leave out the green onions if I don't have any on hand - still delicious.

No Roll Pie Crust I

Very easy and quick. I rolled out the dough (easier than spreading with your hands). Used whole wheat flour (heart healthy) and canola oil. Turned out great for my Turkey pot pie. Way tastier than store bought frozen crust. The whole wheat especially gives it way more taste.

Wendy's Quick Pasta and Lentils

Added a hot green chillie, fresh basil, balsamic vinegar, can of lentils (instead of soup), whole can of crushed italian tomatoes and pesto. Turned out quite good and very quick to make.

Low-Fat Blueberry Bran Muffins

Very moist and healthy. I used 1 cup whole wheat flour, 1/2 cup honey instead of sugar and liquid egg white instead of a whole egg. Delicious. My 3 yr old even loved them!

Szechwan Shrimp

So delicious and easy. It was amazing. I used raw jumbo tiger prawns, doubled the sauce, added hot sauce and 2 cups of frozen veggies. I then mixed in spaghetti noodles. Yummy.

Tex Mex Black Bean Dip

Soft Oatmeal Cookies

Guilty pleasure! The key to the recipe is the butter which makes them delicious. Key changes - half batch with cherry craisens other half with mini choc chips. I prefer crispy oatmeal cookies so I formed balls and squished down with hand until very thin and baked until golden brown. They don't flatten or expand much during baking. Keeper.

Sausage Egg Muffins

Good recipe. I left out the chiles and garlic powder. Used bacon and ham, added 1/2 cup shredded cheddar, 1 diced tomato (fresh from the garden), hot sauce, 2 green onions (instead of yellow) and topped with parmesan cheese. Next time I'd leave out the salt (plenty in the meat and cheese). Nice change for breakfast. Made one dozen regular muffins, and 24 mini muffins.
