About this Cook
I am Jenny. A hard working girl who likes to bake twice as hard. My co-workers love me and hate me at the same time. ;)
My favorite things to cook
Brownies. Even though I always bake batches then never eat them, I love how they are all the same, yet, all different. Plus they are easy!
My favorite family cooking traditions
We don't so much have cooking traditions as mere eating traditions. Thanksgiving we all get our own dessert pie. Period. A whole pie to ourselves, yum. That is a tradition to keep. This is the only time of year that we all get our favorite pies, any other time we have to share! New Years is a no bake/easy bake day, normally consisting of various finger foods: sushi, cheese and crakers, shrimp, not to mention leftovers from Christmas gift baskets!
My cooking triumphs
Baking my own croissants was a big one - and actually getting compliments on them!
My cooking tragedies
I get very frustrated when things don't turn out well, especially when I am unsure if I am doing it correctly. I do not have any friends that bake, so I do not have anyone to double-check with or ask questions to, which makes it hard when I make a mistake (or, if I'm not making a mistake but worry that I may be!). I have been known to completely throw out an entire bowl of batter, or a whole batch of cookies, simply because they did not turn out how I imagined (even if they still taste good, I get so disheartened).

Banana Pancakes I
This is a great, very basic, and easy pancake recipe. I have this memorized and make it whenever I want to whip up something tasty for breakfast (and it really impresses my friends that I can make pancakes from scratch...little do they know how simple it is!). I love the banana flavor in these, and also enjoy adding in nuts, chocolate chips, or blueberries (although it's also even tasty plain!).

The Best Lemon Bars
I, as well, had to cook the crust for an additional five minutes or so, and I used 3/4 Cup lemon juice (fresh squeezed) as well. The only reason I did not give this five stars is because I had to bake my custard for nearly 45 minutes (I baked it for the 20 as written, then let it sit in the firdge over night, but it was still all liquidly, nearly water-like!). I then baked it for another 14 minutes and it turned out well, but the edges had gotten a bit crusty, so I just cut them away. But after all that the bars turned out fabulously. Although, it did seem like my crust puffed up a bit too much for my liking, I'd prefer a smaller crust, like only 1/6 of an inch, so I shall use less of the crust next time (and there WILL be a next time!).

Creamy Chocolate Cupcakes
I only made a couple of changes, but this recipe turned out pretty great as is: I used 1 Cup milk in place of 3/4 Cups water, and I only use a half cup of mini chocolate chips, instead of the full cup, and I omitted the walnuts as well. The cheese cake mixture sunk quite well, but I used a tip from another rating and put a bit of bater on top (although, when I sliced them open, I saw that the cream cheese did a very good job at settling towards th bottom anyhow). My boyfriend, who isn't even a big fan of desserts told me "Wow! You have to make these more often!" Which means that this recipe HAS to be rated 5 stars. :D
