Glazed Pork Tenderloin
My husband loved it, and it was my first real attempt at a pork tenderloin. It was super-easy, and it accomplished my mission: to use up my pineapple preserves (although, now I'll have to buy more, to make this again). Delicious!

Cinnamon Ice Cream
This ice cream is SO rich but SO good. My only suggestion is to let it ripen in the freezer before serving it; it tastes better and takes the edge off the rich sweetness. I served it with apple crisp...yummy!

Chocolate Chip Mint Ice Cream
I liked this recipe; it was easy and very creamy. I did use mini chocolate chips instead, which worked very well--though I added them a little late in the mixing process (after it had already thickened). My only complaint was that it was a tiny bit chalky, but for low fat, it satisfied my craving for ice cream!
