Slow Cooker Beef and Mushroom Stew
I didn't have pearl onions so I quartered half of a yellow onion. Also I cooked on high for 5 hrs, not low for 11. Easy, delicious, and everything came out very tender.

Green Beans and Potatoes
Good and easy. I used 2C. chicken broth instead of the vegetable broth. I threw in some chopped onions. Added extra corn starch to make broth thicker as well as some Mrs. Dash at the end for an extra kick. At 420 calories (by my estimates) and no oil ... this one's a keeper.
