Potato Cheese Casserole
I served this on Christmas Eve and my family loved it. I also sauteed the onions and peppers prior to adding to the potatoes. I omitted the pimentos.

Pork Sausages with Caramelized Onion Sauce
Excellent! The onion sauce was delicious. I added a little pepper to the sauce. I used 3 onions, and that was enough for my 4 sausages. I used mild Italian pork sausages. Next time I will make more-- Our little family of 3 ate almost all of it.

Maple Dill Carrots
Yum! These were great. Next time I will make more (our family of 3 almost ate all of it). For casual dining, I will use a little less butter.
