Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Yummmmm!! This is absolutely delicious. I salted and peppered the pork and dredged it in flour before searing in oil. I drained the oil and then took the advice of another reviewer and braised in 1 cup chicken broth for about thirty minutes. I also used roma tomatoes instead of the grape. They were excellent. When the broth reduced by half I added about 1/4 cup milk just to make it a tad creamy. Fresh Parsley on top of the feta and BAM. Delicious recipe. Gotta try it peeps.

Old-Fashioned Cheese Potatoes

These potatoes are sooooo good. I will never go back to my old scalloped potatoe recipe. The onlything i changed was that instead of the processed cheese I used shredded chedder cheese. The processed would probably come out creamier but I have always liked the texture of the real cheese better. Try these. You will love them.

Dad's Double Whole Grain Pancakes

I just got done making these for breakfast. Yummm! These are so good. I am on a diet so i took the advice of another reviewer and omitted the white flour and used all whole wheat flour. Instead of the butter I used cinnamon applesauce and I only had 3 eggs but they turned out fine. I also added some vanilla about a tsp or so, a little bit of cinnamon and i used skim milk in place of the powdered and water(only 2 cups though). Excellent recipe so healthy and delicious with a bit of sugar free syrup. yielded about 10 large pancakes.

Spanakopita II

This is seriously an awesome recipe. I made these for a get together recently and they were gone in less than an hour. You really don't need to change anything. The recipe is great as it is.I did add some parmesan along with the feta cheese. You must use feta it really makes these and don't skip the dill either. It is essential. I also didin't use the whole amount of butter. You really only need about 1 1/2 sticks. The recipe says to cut the phyllo sheets in halves and fill. You can also cut into thirds. This will make a good size for appetizers. Wonderful recipe!!! Watch the how to video it really helps!!

Green Bean Supreme

This is a great recipe lots of flavor. I doubled the beans. I didn't use fresh I used canned beans two of them. I also added fresh mushrooms that I sauteed with the onion. I also added a lil more than a 1/4 cup of sour cream. I omitted the w. chestnuts just cause i don't like them. All in all this was a great dish. Definitely more flavor than the same recipe everyone is used to.

Dill Potato Salad

this is a good starter recipe but I added some ingredients to inhanse the flavor or else it would have been very bland. i read the reviews for this recipe and made these changes: i used 9 cups of new potatoes. added 1/2 cup light mayo. about a 1/4 cup red wine vinegar. 1/2 of a medium sized red onion minced. 3 or 4 green onions chopped. some garlic salt a dash or two. 5 hard boiled eggs chopped. and some fresh parsley chopped about a lg palm full. i let it chill overnight and the next evening it was absolutely wonderful. if you like dill this is great although i did use a lil less dill than it called for. i would most definitely make this again and many times after that i'm sure. my new fav version i think.
