I am a mother to 3 beautiful little girls, and wife to one great husband. We live in a small town in Nebraska, where I have recently started working at the local school as a paraprofessional. We are diehard Husker fans, whether it be football, volleyball, baseball...doesn't matter...GO BIG RED! As a family we enjoy camping and boating in the summer. What little spare time I have, I spend baking, reading, or just playing with the girls. My favorite thing to cook would have to be something simple and quick. I cook to feed my family, but I bake, because I love it!! I enjoy baking cookies for the kids, cupcakes to send to school for holiday parties and birthdays and cheesecakes. I have recently started a small out of the home baking business...hoping to expand someday. Growing up I would spend Saturday afternoons at my Grandma's, where she would be baking breads and pies and more pies to feed the family that came over for Sunday dinner. I may have inherited the love of baking, but unfortunately not the art of baking the perfect lemon meringue pie. Every evening that I actually get a home cooked meal on the table for my family is a cooking triumph to me!! Which, thanks to AR, is much more often than it used to be. If you asked my husband that question, he would keep you busy for days..."stick with what you do best" is his mantra to me...there have been quite a few leftovers that have skipped the fridge and gone straight to the trash can after trying a new recipe...but that doesn't stop me! As far as baking goes...as much as I love to bake, you would think I would invest in a good timer, can't begin to count the number of cookies, cakes, etc. that I have burnt.
