Tim's Green Bean Casserole Extraordinaire
This is obvisously a VERY heavy recipe. Don't make it if you are looking for something light. I made a few changes and I thought it was really good! I used 1lb fresh green beans, added some garlic, used 7oz of Brie and instead of corn flakes I used a box of Blue Diamond Almond Nut Thin crackers. The almond flour crackers were a really nice mix w/the casserole. I'll be making it again for sure.

Valencian Savory Empanadas
If you are not a fan of refrigerated bread mixes (i.e. Pillsbury) this recipe is not for you. I thought it would be ok by the time we added sour cream & pico de gallo on the top, but I just could not get over that refrigerated dough taste. I might make this again, but I'll make my own dough in the bread machine.

White Beans with Rigatoni
This was really good! I made a few changes just based on what I had on hand. I added bell peppers and a can of corn. I used black beans and mozzarella cheese because I had those on hand. This is my and my husband's favorite meal ever made with kale. I think you could make a lot of changes (additions or substitutions) and still have a really great dish!
