Chicken Enchiladas II
I really liked these a lot! I pretty much followed the recipe the first time. Next time I will add more seasoning and jalepenos or something to add spice. I agree that enchiladas are made with corn tortillas, but I would just ignore the name and stick with the flour tortillas because it works. I would also make more filling (add more chicken or maybe beans). I was only able to fill 4 12-inch tortillas.
