About this Cook
Hi! I used to be a primary teacher, but am retired now. My family has lived in Guildford since 1977 and prior to that we had lived in Zambia in Africa for five years. I was born in Bombay, India and my husband in Argentina, so we have quite an international background which has influenced my cooking interests a lot.
My favorite things to cook
I am quite an adventurous cook and love to try new things. I love baking bread and have recently been jamming the plums from our plum tree. In the season, I make all our marmalade, but Seville oranges are getting harder to find.
My favorite family cooking traditions
My mother-in-law always made all the family's jams and marmalades and I seem to have taken this tradition over - I even use her marmalade recipe, which is really good.
My cooking triumphs
We have a grape vine growing up the front of the house and last year I used the grapes to make a barm from which I made some very successful sour dough bread. That was a wonderful experience and made me feel like a million dollars!
My cooking tragedies
I've never had an out-and-out tragedy - just a few things I won't bother to try again because the results weren't that great.

Portobello Penne Pasta Casserole
This recipe is excellent. The soy sauce definitely makes a big difference. I used fresh spinach and fresh basil, just cooking the spinach down in the minimum of water and then draining it well. I used the reserved spinach water to cook the penne in as it is full of spinach minerals. Instead of portobello mushrooms I used an "exotic" mushroom mix - shiitake, oyster, etc., etc., and it was wonderful. I used mozzarella in the sauce, but scattered crumbled feta over the top before putting it into the oven. I can wholeheartedly recommend this dish and will certainly be making it again.

Caribbean Sweet Potato Salad
I've just made this recipe for the first time. It is delicious and well worth repeating. For a start, it contains ALL my favourite ingredients and the tangy freshness of line juice with the sweetness of the potato is delightful. I didn't have any peanuts in the storecupboard so I used 2 tsps of crunchy peanut butter which I beat into the limejuice.It was good, but I think peanuts would have been better. Many thanks to you, Jessica, for this hugely tasty dish!

Asparagus and Mushroom Puff Pastry Pie
I made this yesterday, adding some chicken breast to the asparagus and mushrooms. Fabulous! My 8-year old granddaughter polished her plate and decided that she now likes asparagus and mushroom. Result!! I shall make this again and again. It was so quick to make and so delicious. Recipes like this are a godsend to busy cooks.
