Ricotta and Artichoke-Stuffed Chicken Breasts
We liked the idea of this recipe, but the filling was rather bland. Overall it tasted ok and had a great texture and presentation, but if I made this again I would mix in stronger cheese, along with quite a bit of garlic, onion and herbs for more flavor.

Chantal's New York Cheesecake
My first attempt at a "real" cheesecake and it was amazing. I started a little late so ended up taking it out before the 5 hours was up but next time I won't since it was a tiny bit softer in the middle than it should have been. Still absolutely wonderful flavor and texture. I did put a pan of water on the tray below while baking and it worked - no cracks! My husband loved it with a strawberry sauce and I thought it was great covered with mini-chocolate chips and drizzled with chocolate and caramel sauce.

Baked Corn
We affectionately named these "cornies" since they have the soft texture of brownies but flavor of corn bread. A new family favorite for sure.
