I wasn't expecting that much from this because of the minimal ingredients involved, but what a GREAT SURPRISE!!! I threw this together inthe morning and it was wonderful! There was so much flavor to this ! I think I can modify this with different vegetable ( just used frozen mixed vegetables), but I think I can different textures/tastes with different vegetable combinations. Try this with a dollop of sour cream on top! YUMMY!!!! This was GREAT!

This was great!!! I had been hunting for a rice dish I could fix in the oven and this is a keeper! I did cut the butter in half as suggested by other members. I think next time, I'll add some fresh herbs and/or almonds/nuts of some kind to this, for color/texture, but this is great like it is! Thanks so much! A keeper!

This was VERY EASY and VERY GOOD! A very tasty chicken dish; the olive oil and fresh herbs made this wonderful!!! Served this with baked brown rice on this web site. This is simple enough and week night dinners, but I think I'll put this on my "company menu" plan too! It's a dish that almost everyone will like!!

I made this for Mother's Day and it received RAVE REVIEWS from everyone!!! I was hunting for a potato recipe that did not include mayonnaise and this one was great!!! I wondered if this would be bland, but the combination of the garlic, olives, olive oil and seasonings (although, I did not have fresh basil and used dry instead)made this a WOW!!! I've made similar recipes that include about the same amount of ingredients that do not come close to this one. This does resemble a german type potato salad, (to us, anyway!) Everyone loved this and I will definitely make this again! Absolutely a great potato recipe to use in warm weather!!
