Thai Cucumber Salad
Wow...this was really refreshing and tasty. I forgot the jalapenos so I added some chili powder to the dressing. Will def do again using the jalapenos

Three Cheese Garlic Scalloped Potatoes
Wow! So rich and yummy. Subsituted garlic for some garlic cheddar cheese I picked up in Vermont. This I will def make again. Had the oil issue as well but just drained some of it off

Tuscan Cream Cheese Spread
This was pretty good...think I will omit the green onion, though. Did add a couple of tablespoons of milk to make it creamier and took other's suggestions to make it the day before.
