Fabulous Wet Burritos

Really, really delicious!!! Only change that I made, was to roll up the meat/bean mixture inside tortilla; put all burritos in a 13x9 pan; cover with tomato soup mixture; top with cheese and bake in 350 oven for 25 minutes. YUMMY!!! Husband like too!

This recipe was not bad, but it is nothing special. I'm surprised at all the great reviews that made it sound so outstanding. It has very little flavor. Followed the recipe closely, but ended up sprinkling garlic and Italien seasoning over the top, b/c it was just too bland. Also, used to extra cheese trying to "liven" it up a bit. Will not make again.

Very, very delicious. Made with very few changes. Next time I will use a bit less mayo--it kind of overpowered the fish. Husband LOVED. Will make again.

Spinach Tomato Tortellini

OUTSTANDING!!! Added twice the spinach and some chopped cooked chicken breast. It was excellent! The whole family loved--even my 15 month old loved it! MMMM...MMM...Delicious!!

Zucchini Alfredo

AMAZING!!! I changed it just a bit and will make over and over!! GREAT way to use zucchini! I cooked onions in with the zucchini and added about a 1/2 c. of parm right to the sauce. I also added shrimp to the sauce. My family LOVED!!

Slow Cooker Pork

AMAZINGLY DELICIOUS!!! Used 4.5 lb. pork loin with the bone in. Used shredded pork in tacos! OUTSTANDING!!! And the left-overs were just as good!

Spinach and Feta Pita Bake

OUTSTANDING!!! My husband missed having no "meat",so next time I will add some chopped chicken to his, but this recipe is FABULOUS as is! I added oregano, basil and parm to the pesto before spreading. I also added sliced onions, in addition to the spinach, mush, and tomatos. I sprinkled the top with basil, parm and black pepper and then topped with feta. Drizzled a little EVOO over top before baking. YUMMY!!! One of my new favorites. BTW, my 14 month old didn't really like this--not very little kid friendly, but GREAT for older kids/adults.

Pepperoni Stuffed Mushrooms

Pretty good, but not 5 stars. I sauteed the mushroom caps in a little EVOO before stuffing, as suggested. If I make again, I will sprinkle a bit of mozz cheese over the top before baking. It seemed to be missing something--I think it needs the cheese.

Mouth-Watering Stuffed Mushrooms

These were good, but not 5 star. Followed recipe exactly, except that I sauteed the mushroom caps for just a few minutes in a little EVOO so they were a bit softer before stuffing. Just OK in our opinion.

Strawberry/Rhubarb Crumb Pie

On taste alone, this is a DEFINITE 5!!! However, it was pretty runny, so I am giving it a 4. (It did help when I refrigerated it). Next time I will use a little more flour or substitute cornstarch (I find it thickens better). I also added a little cinnamon to the crumb topping. DELICIOUS!!!!

Lori's Spicy Chipotle Lasagna

OUTSTANDING!!! The BEST lasagna I ever made--and I've made a ton of it!!! I couldn't find the chipotle chile pepper in adobo sauce anywhere (live in PA, so my "international section" at the grocery store is very limited). Anyway, I eliminated it completely and used a little chili powder and Tapatio (had this left from when I lived in San Diego). I added the chili powder and Tapatio to the meat mixture and the whole dish was AMAZING!! I'm sure if you made it with the chipotle pepper it would be even better, but that's hard to imagine. I would recommend making this in a larger pan than 9x13. Mine was overflowing. If you have a true lasagna pan, use that or you will run out of room.

Easy Slow Cooker Meatballs

Sauce was excellent! Used 2 large cans of Hunts Traditional tomato sauce, 1 can of Furmano's Italien crushed tomatoes, and 1 can of tomato paste. Also added a little dried basil and Italien seasoning, a can of mushrooms and a about a half cup of chopped onion. The meatballs were a little bland. I will add much more seasoning to them next time. I also baked them (as others suggested) for 15 min at 350. Didn't really make any difference b/c I used 93/7 beef (no grease). I will just throw them in the sauce uncooked next time instead of browning ahead of time. Overall, yummy.

Heavenly Potatoes and Ham

Made this very close to the recipe, except used chopped white onion instead of green onion (b/c that's what I had on hand). It was OK. Nothing that blew my family away. Don't get me wrong, it was good, but probably won't make again.
