About this Cook
I'm a wife to a wonderful husband, mother of a beautiful baby girl, and "mom" to an adorable little Yorkshire Terrier--his name is Rocco. I am also a branch manager for a local bank and proud to have a wonderful team that I work with. My husband and I love to spend time together cooking and trying new recipes (well, I do the cooking and he does the tasting). I have been very blessed.
My favorite things to cook
I love to try all types of appetizers, dips, casseroles, and desserts. My favotite cuisines are Italien and Mexican. However, good 'ol American-style food is GREAT too!
My favorite family cooking traditions
My mother and I have been "cursed" with going WAAAAY overboard when it comes to cooking for family and friends. Holidays and get-togethers are ALWAYS overloaded with tons of traditional dishes and lots of new recipes that we whipped up for the occasion.
My cooking triumphs
I have been fortunate to have made a lot of delicious dishes over the years that people across the country have praised and asked for more, but as for a specific triumph, I don't have one.
My cooking tragedies
Hmmmm...I'm sure there's been a few, but I obviously "block them out" b/c I can't think of one to write.

Strawberry/Rhubarb Crumb Pie
On taste alone, this is a DEFINITE 5!!! However, it was pretty runny, so I am giving it a 4. (It did help when I refrigerated it). Next time I will use a little more flour or substitute cornstarch (I find it thickens better). I also added a little cinnamon to the crumb topping. DELICIOUS!!!!

Lori's Spicy Chipotle Lasagna
OUTSTANDING!!! The BEST lasagna I ever made--and I've made a ton of it!!! I couldn't find the chipotle chile pepper in adobo sauce anywhere (live in PA, so my "international section" at the grocery store is very limited). Anyway, I eliminated it completely and used a little chili powder and Tapatio (had this left from when I lived in San Diego). I added the chili powder and Tapatio to the meat mixture and the whole dish was AMAZING!! I'm sure if you made it with the chipotle pepper it would be even better, but that's hard to imagine. I would recommend making this in a larger pan than 9x13. Mine was overflowing. If you have a true lasagna pan, use that or you will run out of room.
