About this Cook
I love animals. And they all seem to find me when they are looking for a home. I love to cook, but I'm not very confident about my cooking. I'm not very good at meal planning or sticking to a planned out week of meals. I always have so many projects going on, that I usually wait till the last minute to start cooking, which ruins my plan. Right now I need to figure out what I'm going to do with those avacados that are sitting on my counter top going bad.

Chicken salad quesedillas. I always get it right, never burn.

My cooking tragedies
Anything involving bread. I always burn the bread!?! It's like a running family joke at this point. I've been burning toast since I was a kid and I'm 35 years old now. I was so relieved to see Rachel Ray say the same thing one day on her show as she burned the bread.

Stuffed Jack-O-Lantern Bell Peppers
Can I rate my own recipe? Well, I'll speak for my family, they give it 5 stars. This is one of our favorite things to make this time of year as well as the rest of the year. It's delicious and I forgot to add that after they're done cooking I like to top them off with Ketchup right before serving. Yum! And they freeze good too if you want to make some ahead of time to stock the freezer.

Yogurt Parfait
Honey bunches of oats crushed make good granola topping for this awesome snack. That's what we already had on hand.
