About this Cook
A Working Mom of 4 (teacher for 9 years)
My favorite things to cook
Stir Fry (simple dishes with shrimp), Grilling in the Summer
My favorite family cooking traditions
My mother's kolaches (they are the best and I'm not being biased) and her barbecue meatloaf
My cooking triumphs
Getting better at grilling every year (Can make juicy steaks and succulent shrimp)
My cooking tragedies
I can not make cheese sauces to save my life! They always turn out floury or burnt or just plain nasty. I wish I could, though, because they taste so much better than melting processed cheese from the store.

Onion Rings
Didn't have buttermilk for my usual onions rings so I decided to give these a try because I had lots of Krusteau pancake mix. I floured the onions before I coated them in the mixture (which I substituted beer for the water). They were perfect! I used two cups of the pancake mixture with 1 1/2 cups of Miller Lite beer. This was enough to coat about 1 1/2 sweet onions (which by the way fed 8 adults with leftovers). Will make again and again!

Shrimp Scampi V
I've made this twice. The first time it was restuarant quality. The second time it wasn't as good but that had to be a mistake on my part because like I noted, I had made it before and the recipe was really great. Worth a try if you have the ingredients on hand.

Great sauce! Very flavorful. Will definitely make again. Try it and you'll be glad you did.
