Bush Country Alaska
About this Cook
I have been in the food and beverage industr for 35 years. Having worked with some of the best Chef's in the country, I was able to incorperate something from each one of them. I am very private and live in an isolated region of the interior of Alaska. I do private caters upon request, and sell holidays pies, rolls and cakes. I run a trap line in the winter, along with a wood cutting business. When I am not cooking, I will be fishing. I guide sometimes for different friends. I have been a licensed guide for 10 years.

Roasted Pumpkin Seeds
If you rub the pumpkin pulp and seeds in your hands, (above a colander) you will find the seeds leave the pulp for the bottom of the colander. I soaked them in water and mortons hot salt,(over night) toss them with olive oil and sprinkle a bit more hot salt. (I like spicey foods) Bake until golden.

Sour Cream Coffee Cake I
I did like the basic recipe, but changed the finish a bit. I made them into jumbo muffins and omitted the icing. Instead, I used two tablespoons butter, one tablespoon cinnamon and three tablespoons flour. I mashed these together with a fork until crumbly. Sprinkle on top, and my friends chowed them! I'll make them again, especially in the fall.

Best Green Bean Casserole
This was an easy, no fuss recipe. I used an minced garlic, cream of celery, diced onion and just a bit of fresh cilantro. Good recipe, and you can always add to suit to the number of people you're feeding. Also, I've tried using fresh mushrooms as well, they look wonderful.
