Eggnog Cookies I

These cookies are VERY rich. Like others, I increased the egg nog to 3/4 C, increased the flour to 2 1/2 cups, decreased the nutmeg to 1/2 teaspoon and used 1/2 tsp rum extract and 1/2 tsp vanilla. They were done in 14 minutes. I coated the cookies in colored sugar because anything else would've been too much. The dough is way to sticky to put in a press and they come out 'ugly' if you don't do something. I dropped it onto a cookie sheet and the lightly rolled it into a ball before sprinkling the sugar on it. The cookies came out round and not as ugly.

We loved this! I, too, doubled the recipe for a 11x15 pan. It came out the perfect height. I had to bake it for about 40 minutes.

Pumpkin Bread IV

Yum! I look for ways to make recipes more healthy...so here's what I did. I used 1 C of applesauce and 1/2 Cup of oil, 2 C of Swerve (art sweetener) and 2 C of sugar, I added some pumpkin and decreased some baking powder (high altitude) and used 100% whole wheat flour. It was heavenly!

Grandmother's Buttermilk Cornbread

This was very good and very easy to make. I found that it was done in about 25 minutes (but I live at high altitude). Next time I would like to play with the flavor a bit and add cheese.

Boston Baked Beans

I soaked them for almost 14 hours, and then baked them in the oven for almost 5 hours. I continued to have to add liquid yet the beans didn't seem to get as soft as we like them. The flavor was wonderful, but next time I need to figure out how to get them softer.

Magic Cookie Bars I

I used these tips from another reviewer: Tips - Mix the margarine/butter and graham cracker crumbs together to make a firmer "crust". (My family also melts the margarine in the pan in the oven.) - Pour the condensed milk on the graham cracker crumbs BEFORE adding the other ingredients. It seems to make everything stick together better and it makes it so much more presentable! - Use more than 1 cup of chocolate chips.

Tres Leches (Milk Cake)

This was amazing! The only thing I did differently was adjust the baking powder for high altitude (3/4 tsp) and I also added a tsp of coconut milk powder. I topped it with fresh strawberries. My family couldn't get enough.

Amazing Ribs

My entire family said that these were the best they ever had. I skipped the boiling and grilling (too lazy)and put them in a 300 degree oven for 4-5 hours. They fell away from the bone.
