My 3 rating is rating this cake as written. The only thing I did differently was use 1C white and 1C brown sugar, a cup of applesauce and 1/4 cup of oil (1 1/4 C oil is a lot of oil, so I was trying to cut down on fat) as well as some minor alterations to adjust for high altitude since I live about a mile high (raised temp 25 degrees, decreased sugar by 1 T, increased applesauce by 1T and decreased baking powder by 1/4 tsp). I, also, made it in 2 9 inch pans (for about 25 minutes) and doubled the frosting to make a layered cake. I tasted the batter after I'd made it as written and it was really bland. So, I added a 1/2 tsp of nutmeg, another tsp of cinnamon and another tsp of vanilla. With my changes, it was WONDERFUL! I couldn't get my company to stop eating it. I will definitely make this again!
