Tostones (Fried Plantains)

I used green plantians and canola oil--I had these in a Cuban resturant once and was blown away. These are quite yummy, and surprisingly EASY to make. Thank you!

Roasted Garlic and Eggplant Soup

I found this pretty easy to make (I did it in stages--roasted the eggplants in the morning and put it together in the afternoon) and it really is good--filling as another person mentioned. It benefits from having a splash of worchestershire sauce in it, and it is great with some chewy bread.

Sean's Falafel and Cucumber Sauce

I have not made the cuke sauce just yet, but these falafel are great. I bake them at 400 degrees in a toaster oven 7 minutes to a side. Quick and easy to make, really!

Banana Bread II

Very good...I added cinnamon, vanilla and nutmeg as another person did. I used applesauce instead of butter in this as well, and it is really good.

Quick Lemon Dijon Chicken

Very quick and easy to make, but is very dijon flavored(which I liked) I served this with steamed asparagus tossed with a little butter and basalmic vinegar. Yum.

Eggplant Snack Sticks
