About this Cook
I work as a hospital chaplain and believe that much of my work is about food for the soul and hospitality. I believe the same about cooking. I have travelled a fair bit and enjoy fusion cooking. I usually can't leave a recipe the way it is.
My favorite things to cook
Almost anything as long as it's fresh. But then again, mastering the art of casseroles based on boxes and cans can be quite enjoyable. Lately, I have been working on simple camping food.
My favorite family cooking traditions
I learned to make bread from my father. I learned filipino food from my mother.
My cooking triumphs
Making an eight course meal for twenty and succeeding in serving hot dishes hot and cold dishes cold.
My cooking tragedies
pistachio ice cream that never firmed up. It was gross.

Corny Corn Bread
It's a nice recipe that I changed: cut the recipe in half, used thawed frozen corn for a better bite, and replaced half of the cornmeal with polenta meal for a better bite

Baking Powder Biscuits I
Excellent base recioe. I substituted buttermilk for the milk. I also had the convenience of having self rising flour and used it instead of all the little extras added to the flour.

Chewy Granola Bars
I adapted the recipe by cutting raisins to a half cup and adding a half cup of chocolate chips. I avoided the sticky bar problem by using a silicone sbaking liner. I cut the bars before putting them in the oven and then compacted the bars when they were still warm. This is a good recipe.
