Butternut Squash Soup
Don't get me wrong, the taste of this soup is fantastic but it needs a little tweeking. If you follow the recipe perfectly, you'll find (as did I) that this soup is way, way, way too thick. If this soup is the only thing you'll have for dinner, then it's okay. If you plan to use it as an appetizer, add some more chicken broth to get it to the consistency that you'll prefer. You can also get by using only one cream cheese. Everyone enjoyed the soup but agreed it was too rich. Good flavor just too thick!
