Ocean Spray(R) Oatmeal Cranberry White Chocolate Chunk Cookies
Based on comments, I thought i'd go back to tried and true recipes for a guideline. Think about Toll House cookies or the Quaker Oats cookie recipe, and go by those ratios and amounts. Also, add vanilla to this! It needs a tsp. of vanilla. So I also used 2 sticks of butter, equal amounts of brown sugar and white sugar (I think 2/3 c. of each is plenty), 3c of oats, and left everything else the same in this recipe except I decided to use most of the bag of chips. These were never meant to be low fat anyway, so why not make them turn out great!? These were great with the changes.

Homemade Mac and Cheese
I made some changes that I thought would help with the blandness some people mentioned. To the cheese sauce, I added a little bit of garlic powder, seasoned salt, and nutmeg. I added 1/2 cup sour cream for even more creaminess, and I also added 1 T of yellow mustard. It gives that tang that I want with cheese. Other than that, I followed the instructions, and it was delicious! It does seem like too much sauce, but as others said, it's perfect when it's done!

Vietnamese Rice-Noodle Salad
This is absolutely delicious. I didn't put in the jalapenos and mint, though, because I didn't have any, and i will leave out the cukes next time (personal preference). I'd love to figure out a way to get rid of all of the water that the cabbage releases (you'll see with leftovers) ahead of time. Maybe cut it, let it sit overnight in the fridge with a bit of vinegar, then drain before adding to the rest of the salad? I don't mind floppy cabbage myself. I don't know - I'm not a pro by any means!
