Red Skinned Potato Salad
Actually this was the first time I ever made potato salad. Very easy...very good. I used 1 cup sour cream and 1 cup mayo (instead of 2). Maybe next time will some mustard.

Spinach Stuffed Chicken Breasts
Excellent. I impressed my chef boyfriend with this one! A few minor changes...some on purpose...some by accident. I used thin chix breast so did not need to butterfly it. I used 1/3 cup mayo and 1/3 cup feta...instead of the suggested 1/4 cup (whoops...but I would actually do it this way again). I also added a small amount of chopped bella mushrooms and vidalia onion to the spinach mixture...wrapped the breast with 1.5 slices of bacon each....dashed a bit of oregano...and baked uncovered for about an hour. The middle was a little dry in my opinion...so next time I might reduce the cooking time by a bit. Served with basmati rice cooked in vegetable broth..and side salad. Added a glass of white wine...just perfect!

Spring Risotto
This was a very good recipe. The lemon zest had been forgotten...and I think it would have been even better with that added. My only problem with this recipe is that the supposed 25 minutes of cooking turned into about an hour (maybe even longer). However, It was well worth the wait!
