About this Cook
Well I`m an easy going person (at times the taurus I am, can get the better of me)I live on a 15 acre farm and just enjoy the outdoors I wouldn`t say that cooking was my most favorite thing to do but I do it often and 90% of the time I enjoy it, I think the thing I enjoy most about it, is watching people enjoy the aftermath. Must be the Belgium in me but I really like feeding people, lol
My favorite things to cook
I love trying new dishes especially ethnic ones, My Boyfriend and I really enjoy the hotter spicier ones. I think I may have mastered the curry chicken. Cuz everytime my brothers come down with my nephews thats whats on order. I need to master cooking with fish though, thats got to be my favorite thing to eat, I would almost eat anything that came from the sea.
My favorite family cooking traditions
Well it has got to be Christmas, which seems to be all on my shoulders for the last 16 years or so. Thats the problem with making people happy with your cooking. I do enjoy that special 16 year tradition though. We`ve been using mothers stuffing recipe for probably longer then Ive been around and everyone looks forward to it.
My cooking triumphs
Same as before If I have to cook for 25 or more people and I get it going on time then were off to the races. Christmas dinner is usually like that at my house, HEY!! What ever happened to the times when all us women in the family would get together and cook Christmas dinner all day together. Seems they arrive later and later! Theres one good thing about that, I NEVER have to do the clean up.
My cooking tragedies
Since I love to eat fish so much I think it`s a tragedy that I can`t cook it better, dont know what it is but I`m thinking its the cooking times, every fish cooks for a different time.

Spanakopita (Greek Spinach Pie)
This recipe turned out to be a real good one!! Instead of using phillo dough I used puff pastry that I had made up yesterday it turned our light and flakey and just delisious.. I used frozen spinach with lots of wringing out, next time I will add a pinch of salt to the recipe.
