Gelatin-flavored Popcorn

I absolutely love this recipe!!! I have made this many times using different flavors. Every time I make it I wish I had made 2 batches at once since it never lasts long. One batch is gone in 3 sittings! My only problem making this is that I have glass cookware and the sugar burns on the bottom of the pan somewhere over 200 degrees but I can't taste it so it's not a big deal except when cleaning the pot. I always only use 1 stick of butter. My favorite way to cook this is when I add 1/4 teaspoon of baking soda to the mixture after taking it off the heat but before pouring over the popcorn. I like it just fine without the added baking soda so on the times I forget to add it it's still very good. I bake it for 30 minutes after adding the sugar mixture and never make into popcorn balls or turn it out on foil. Ideally, I want to eat an all raw diet (fruits, veggies, nuts, sprouts, and seeds, etc.) but recipes like this break my will power!!!

Eggplant Burgers

Fabulous idea and great taste! Being a mom of a 2 year old I don't have much time to be in the kitchen. Followed the cooking directions and it came out perfect. Maybe people are having issues because of the different wattages of microwaves out there. Mine is a small 700 watt and takes sometimes double the amount of suggested cooking time. I cooked it for 5 minutes and it came out perfect. No sogginess or falling apart. Maybe because I cut thick slices too. I didn't have any sliced cheese but they didn't need it. My husband would have liked sliced onions on top and maybe lettuce and tomato but he liked it fine just with the bun and condiments. You can dress these up however each family member likes.

Zucchini Yogurt Multigrain Muffins

Wonderful! My 21 month old ate it right away and he is so picky. 1) Cut back oil to 1/4 cup, cut sugar down to 1/2 cup, and used 1/2 cup honey. 2) Used all organic white whole wheat flour and organic everything else in the recipe. 3) Had no tool to get excess water out of zucchini so I put it in a ziploc baggy, cut a small hole in the bottom corner and squeezed the water out a few times. 4) Looked a little stiff so I added a bit more applesauce to make up for only putting in half the oil. 5) Cooked 12 muffins in a shallow silicone cupcake pan and had a lot of batter left over, almost 2/3rds left, so I baked the rest of the batter in a bundt pan. 6) Left out nuts and raisins in the muffins for my son but added chopped pecans to the rest of the batter for the adults. Thanks for a toddler friendly recipe. I wish I had cut back on the sugar more though since he actually ate it. This is his first sweet type item he's ever eaten besides organic animal crackers. I will freeze the extra muffins.

Zucchini Brunch Bake

This was really good. I served this as a main course for a light meal. Used 2 medium and 1 small grated zucchini (to use it up) which made the cooking time longer by 15 minutes. Subbed Italian seasoning for the seasoning salt and oregano. Served with pizza sauce on the side since it was all I had on hand. Will make this again.

Caramel Popcorn

This is very good. I made something similar on a different recipe site that used the crunchy hard Cheetos instead of popcorn. This is definitely less fattening than that recipe! I used 1 stick of butter and it came out great. I used a hot air popper to make the popcorn and wish I knew how much raw popcorn made 5 quarts of popped corn. I am sure that fact is out there but I didn't have time to look it up. I just used 1/2 a cup of raw popcorn kernels in the hot air popper. Seems to be perfect. Doesn't seem to make that much. It all fit in a gallon ziploc bag after it had cooled from the oven.

Delicious Black Bean Burritos

Wonderful! And a fast meal too! Omitted bell pepper and jalepeno since I was out of them but added in part of a can of mild green chili peppers. Increased the cilantro since we really like the flavor. Also, added in some jicama salad that I had left over in the fridge from the recipe "Jicama Salad with Cilantro and Lime" on this site. If you haven't tried jicama, please do so. I add the jicama just prior to rolling the burritos, since it does not need to be heated.

Chicken In Basil Cream

Excellent dish! I wish I had actually measured the liquid ingredients since it came out very runny. Or maybe it's because I didn't give it a chance to thicken. Doesn't matter, this was wonderful! Will make again and again. The fresh basil is the key! Next time I will use a better quality of cheese too. Highly recommend!

Baked Potato Soup V

My sister-in-law gave me a recipe similar to this last year. Her recipe omits the onion and only uses 4 potatoes. Her recipe and this one are way too thick for us. I followed the directions except added 1 cup of chicken stock hoping that would keep it thinned down some. By the time it was almost finished, I used a half gallon of milk. It makes more soup but that is fine with us! We love it this way. Also, only used 5 really large baking potatoes which was plenty. If I had not used the entire half gallon of milk it would have been way too much potato. This is the first time the soup has turned out perfect for us. From now on, I will always use the entire half gallon of milk and 1 cup of chicken stock. Totally forgot to put in the sour cream but we couldn't tell it lacked anything.

Key Lime Cake II

Great cake! Didn't have any key lime juice so I used all lemon juice. It is awesome. Can't wait to try this with the key lime juice. I cooked it in a 9x13 pan in 35 minutes. Also, I added lemon juice to the confectioner's sugar until I got the consistency right. Thanks, will make again!

Vegetarian Moroccan Stew

Great recipe! Had to leave out the olives, lemon zest, and cilantro since I didn't have those on hand. I added an extra cup of vegetable broth because 2 cups weren't enough and a teaspoon of ground cinnamon (in addition to the stick). The flavor is wonderful.

Family Sicilian Sauce and Meatballs

I only cooked the meatballs which are excellent! Didn't have any ingredients to make the sauce today but will definitely do so. The meatballs were so moist and the cheese added a great flavor to them.

Portobello Penne Pasta Casserole

Good dish! It needed something though. I should have added sun dried tomatoes like others suggested but I didn't have any on hand. The substitutions I made were half a bag of fresh spinach, used half the amount of butter (always use equal parts butter and flour), and used fat free half and half for the milk (needed to use it up). We liked it with the soy sauce just fine. I had no problems with it thickening up. If it's too thin just give it time and it will thicken eventually. I always cook the flour and butter mixture a few minutes before adding the milk to cook the flour taste out of it. Will make again.

Wonderful! Subbed olive oil for butter eliminated garlic since I can't eat it while breastfeeding. Cooked on the stove top since we had a hot February day here in NC at 67 degrees and didn't want to use the stove.

Gobble Up Granola Snacks

Love this! Used the 2/3rds ratios like recommended except 1/3 corn syrup and 1/3 honey. Used craisins and pecans and 1 teaspoon of vanilla and a tad bit of salt. So easy to make. At first I thought it was going to be hard to stir but was done in about a minute or so and was no big deal. Lined a 9x13 pan with oversized parchment paper and sprayed with Pam. Used a sandwich bag sprayed with Pam to mash it down at the end. Very easy and so good! Next time I will try it with just honey. I can see making this a lot! ***Update 2 weeks later: I have made this 3 times and love every bite. Just use my hand to press into pan. Still using 1/3 corn syrup and 1/3 honey but now I am out of corn syrup so next batch will be all honey. My mom couldn't stop eating these either!

Chewy Red Raspberry Squares

Love how easy it was to whip up a dessert! These are really good. Subbed Red Plum Jam instead since out of raspberry preserves. A bit too sweet (not because of the jam)so next time I will cut back on the sugar a bit by maybe a tablespoon or so. Will make again! Mine are still too hot to eat but I keep picking at it anyway. So yummy! ***Update 3 days later: I just had to make some more! I love these. I subtracted 1 tablespoon of brown sugar and it was perfect for me. ***Update 4 days later: Used vanilla extract instead of almond. Love it this way the best!

Scented Applesauce-Cinnamon Ornaments

Very easy to make. I scaled mine to 2 cups cinnamon and two cups applesauce since I didn't want to make that many. This amount filled a large cookie sheet. Rolled between 2 wax papers using a jar of spaghetti sauce because I couldn't find my rolling pin. Made them a bit thicker to almost 1/2". Used a straw to punch hole. Baked on parchment paper at 200 for 2 hours. Wish I had turned them over midway since the tops were dry but the bottoms still had damp spots but it wasn't a big deal. Next time I will take another reviewers suggestion and bake on parchment lined cookie sheet for an hour then transfer directly to the oven rack itself for another hour to an hour and a half. Will make again next year for sure!

Cherry-Pistachio Bark

Great for gift giving or eating yourself! These were very easy to make with no problems whatsoever. I had some white bark left over from another recipe from this site "Crunchy Peanut Bark". It's nice to have on hand for last minute gifts too. I portioned one batch into 4 gift bags. When you take the cost to make this divided by how many people or families it's an inexpensive gift that tastes great! Didn't change the recipe at all. Will make more tomorrow.

Crunchy Peanut Bark

What an AWESOME recipe!!! I normally make no-bake gift treats with white or milk chocolate and decided to change it up this year with this recipe. I have never eaten a "bark" before and it's crunchy! A delightful surprise! I made a half batch as a trial run. It was so easy that I forgot to add the peanut butter. It was good without the peanut butter but I ran back to the grocery store (1/4 mile away) and bought 5 more packages of the bark. Then I made this recipe exactly as written. I spread it out on wax paper on my biggest cookie sheet since I don't have the patience to do the drop by spoonfull method. It takes literally less than 10 minutes from start to finish not including the time it takes to set which isn't very long. If you plan on making several batches to give as gifts if you do them back to back you can reuse the bowls you mixed this up in which saves so much time. I also bought the chocolate bark and plan on making this recipe with that instead of the white bark just to see if that is any good which I am sure it will be! Please try this recipe. Honestly, I am giving this as Christmas gifts to everyone we know! The ingredients, nuts, rice cripsies, and marshmallows will make many batches so the major cost is the bark. I have maybe $4 or $5 invested per family which is cheaper than a bottle of wine and it's so much more yummy! If you are a smart shopper you can probably shop around to find the cheapest prices on the bark and other ingredients too.
