Stuffed Guinea Squash (Eggplant)
This was sooo good! I halved and microwaved the eggplant for a few minutes. Sautéed onion, eggplant, & garlic in olive oil. Added a bit of tomato sauce, seasoned with garlic salt & basil. I did not add any bread crumbs or Cheddar cheese, but instead added Parmesan cheese to taste which gave the desired consistency. It was delicious, thanks for sharing such a great recipe! :)

Mexican Rice II
Very Tasty & EASY! I sauted the onions, garlic & cumin; substituted vegi broth for chicken broth; replaced tomato sauce with mild salsa and added a few shakes of cayenne pepper for a bit of kick (we like things on the light side of spicy, but I may add a bit more next time or try the taco seasoning as suggested by others). I tossed everything in my rice cooker and voila! Try with the Polenta and Vegetable Casserole, Sweet Corn Tomalito, Best Guacamole & of course Margaritas! Thanks for sharing, this is a keeper!

Polenta and Vegetable Casserole
Certainly a keeper...I made this with very few changes. I omitted the kidney beans (did not have any); only used 3/4 pack of fajita seasoning and served the salsa on the side w/sour cream & guacamole. It could use something to hold the beans/corn together (serve with caution..LOL)...but NO ONE slowed down on eating it. Very tasty....try with Mexican Rice II, Sweet Corn Tomalito, Best Guacamole & of course some Margaritas! :) ENJOY!
