Chocolate Chocolate Chip Nut Muffins
I followed the recipe to a T. I agree with others - stuck to the pan, which hasn't been an issue before, bland, not special. I ended up not taking them to my function.

Sunday Brunch Casserole
this may not be the most refined brunch dish, but the taste combined with the ease makes it a 5 star for me. i listened to others and my stomach to make a few changes: i did the cayenne switch for dill: i used only 9 eggs, I used half gouda/half cheddar (i think smoky gouda compliments the smokiness of bacon better), I added 2 table spoons fresh chopped parsley, and I added 1/2 cup seeded tomatoes. It was delicious and reheated well - a key factor for a 2 person house.

Gourmet Mushroom Risotto
This recipe was fantastic. I made it for a group of friends, abd they could barely talk they were so busy shoving it in. A few changes. I agree about adding garlic, at least as personal preference goes. In addition, I used an extra 1/8 cup of cheese, went with a 1/2 cup less muchrooms, and right before serving, threw in about two tsp of freshly chopped chives. It livened up the heaviness of the dish just enough to diminsh my guilt! I served it with a chicken roll up and the crowd was delighted.
