North Carolina-Style Pulled Pork
To be fair, I cooked my pork shoulder the night before to make burritos, but I used the sauce, and it was fantastic. I threw the rest of the shredded pork shoulder into a skillet with the sauce and let everything simmer for a while. Delicious on a bun with coleslaw. Reminded me of my childhood. I highly recommend the sauce, but I will admit that I didn't try the rest of the recipe. The sauce is so flavorful that it will probably overwhelm anything you do to the meat before you add it to the sauce. This sauce is pretty vinegar-y, so beware if your idea of pulled pork involves anything approaching BBQ sauce. This is definitely NC-style and goes best with a healthy heap of coleslaw on the sandwich. Delicious!

Sam's Famous Carrot Cake
I am a certified "meddler" when it comes to trying recipes, but I made this 100% according to the recipe, and it was the best carrot cake I've ever eaten. I normally shy away from carrot cake because the frosting is way too sweet, but I used the Cream Cheese Frosting II recipe (with the addition of only a tiny bit of lemon juice) and this was fantastic. My boyfriend can't stop talking about it.

Carrot Rice
This rice is a very versatile side dish for a lot of main dishes. I have made it multiple times, both according to the recipe and with modifications. It's one of those recipes you can make to the letter and still have a yummy dish, unlike a lot of the Allrecipes recipes that everyone loves with just a few modifications. However, this dish lends itself well to modifications, so feel free to change it up.
