Mango-Banana Smoothie
Very tasty. The plain yogurt keeps it from being too sweet. I didn't have orange-mango juice so I used regular orange juice and it was very good. It would probably be even better with orange-mango. Simple, healthy and refreshing.

Addictive Sweet Potato Burritos
Delicious! Following the suggestions of an earlier reviewer, I use black beans instead of kidney beans and vegetable broth instead of water, and I saute the spices with the onions and garlic to bring out the flavor. I prefer corn tortillas to flour, so I make these as quesadillas instead of burritos. To do this, I spoon on some sweet potato then some bean mixture, covering half the tortilla, sprinkle on a little low-fat shredded cheddar, and fold the tortilla over. (To keep the tortillas from ripping when I fold them, I heat them a little on each side in a non-stick skillet before adding the filling.) Then, I heat the quesadillas in the skillet on each side until brown and crisp and serve with some salsa on top.

Roasted Brussels Sprouts
Well, it's official -- I'm an addict. I crave these things. My favorite part is the outer leaves that fall off and get really black and crunchy. (If you're conscientious about stirring, you can get them at just the right moment.) The next step will be me buying Brussels sprouts on the street corner. It's embarrassing, really...
