About this Cook
I was a caterer, waitress, did most everything one can do in a restaurant and cooking teacher. I am disabled now with CHF, Fibromyalgia and diabetes. I have no children of my own but all kids are welcome here. can't count how many call me Aunt Nessa and my hubby Uncle. We are 3 dog parents. My baby is a schnauzer mix named Zoey. We live at the bottom of the state of Texas, it's hot here and we spend about 7 months a year in the pool, pups too!
My favorite things to cook
I love Thanksgiving! That is my day to shine. I also enjoy turning a regular recipe into a diabetic recipe then hearing compliments on it. I like quick and easy stuff and crock pot meals.

there are none, I learned to cook after I left home
My cooking triumphs
Every year our town has a P R C A A Rodeo. I make around 20 cheescakes to sell by the slice and close to 600 cookies to sell (2 for $1) I ran out of cookies this year! I use my own recipes for Cowboy cookies, Cowgirl cookies and Cow Pie cookies ( These sell the most)
My cooking tragedies
I was trying to impress my boyfriend (Many years ago, actually 1974) with a new dish. Eeeeeuuuuwwww! It looked like dog food, smelled like dog food and YES IT TASTED LIKE DOG FOOD!!! YUK! David felt so bad for me he took e out for prime rib. It's an absolute miracle I can cook as well as I can now!

Chantal's New York Cheesecake
Easy, Delicious, I say absolutely wonderful!! I make 12-14 cheesecakes to sell at a local rodeo (By the slice) and this one is the best recipe I have EVER had!! I was out of milk so I used half and half and OMG, this one is SO VERY CREAMY! I used with the flavors I make (Raspberry Ribbon, Chocolate swirl, key lie etc) and it worked with everything I added to it. Thank you Chantal!!

Fruit Cocktail Salad
I almost wish I had never taken this recipe to my cooling class. I brought a little home to my husband and now I have to make it twice a week! We are both diabetic and I'm not much of a fruit eater but I can;t stay away from this-it's just too darn good!
