Angela's Potatoes

This was REALLY good. I made 3 changes, though. I only had 1/2 lb. of Velveeta so I used a combo of 1/2 fiesta blend shredded cheese and 1/2 Velveeta. I added garlic powder, onion powder, and pepper to the cheese mixture. I also didn't have the Ranch mix so I used real ranch dressing in place of the mix and the milk. These additions turned out perfectly and added so much flavor to the potatoes. My sister couldn't believe I made them from scratch.

Broccoli Cheese Casserole

I've made this a few times with success each time. I use 1 can of cream of mushroom instead of the milk. I also use Velveeta instead of the jarred cheese. And 1 cup of rice. I also put several dashes of garlic powder in.

Okra, Corn and Tomatoes

I made this recipe as written except I used creole seasoning instead of file powder because that's what I had on hand. It turned out stupendous! I really loved the flavor. It was my 1st time using okra. I was a little apprehensive because of the slime factor involved, but it wasn't a problem. I also didn't have bacon or onions so I used canola oil and onion powder. Very simple recipe.

Texas Hash

This was a good recipe. I added creole seasoning to the ground meat while it was cooking. I used salsa instead of the diced tomatoes. I also added cumin and red pepper flakes with a touch of paprika to the beef mixture in addition to the chili powder with a couple more dashes of creole seasoning. I didn't have any cheese so I had to omit that, but I can tell that it would have put this dish over the top. I really liked it. My 3-year-old didn't, but she's picky so that's not saying much. :) This dish tastes like spanish rice with gound beef and cheese.

Salmon Chowder

As is the soup was a little bland. I added red pepper flakes, more salt and pepper, and a couple dashes of Italian seasoning. I also used three 6 oz. cans of boneless skinless salmon. The two 16 oz. cans that's written in the recipe has to be a mistake because my 3 cans provided more than enough salmon. I didn't have any evaporated milk, so I used heavy cream.

Grandmother's Buttermilk Cornbread

This was my first time making cornbread and it turned out wonderfully. I was so nervous as I'm a huge cornbread fan, but it was great. And my husband loved it which was even more important to me.
