I'm a stay-at-home mom of 3 year old Christopher Joseph, except for the couple nights a week I escape to work for me time :) I have a wonderful husband. I'm addicted to allrecipes and I love trying new things to cook and bake. My new obsession is mastering homemade bread, which I think I've come a long way. I'm also tackling a container garden this year, thanks to the inspiration from one of the lovely ladies on the RE. Other than that, I love to curl up with a great book (when I get the chance).

Fiber One(R) Chocolate-Peanut Butter Haystacks
Who would ever think something good for you (the Fiber One that is!) would taste so darn good! I had my friends taste them and rate them without telling them what was in it and they all gave them 5 stars, and were totally shocked to know the ingredients. I used regular peanut butter because that is all I had on hand, but kept everything else the same. They were absolutely delicious little treats that definitely filled my chocolate craving. Me and the little guy had a blast making them. These are a definite keeper in our house!

Yuppie Kolcannon
What a delicious potato recipe that even got my guys to eat cabbage! The potatoes were creamy and I loved the slight tang from the vinegar. It is a great way to use up left over "coleslaw" in a bag. It paired well with our meatloaf dinner and will definitely be a repeat in our house. Thanks for sharing!

Dressed-Up Broccoli
Simple, delicious and easy...you can't get much better in a recipe. I absolutely love the crunch that the topping gives to the broccoli. It had just the right amount of garlic and buttery crumbs. I did steam the broccoli in the microwave, but next time I may try just roasting the broccoli. This is definitely going to be a staple in our house...even the little guy loved it. Thanks for sharing!
