Crustless Spinach Quiche
I also put in orange and red bell pepper and a few mushrooms to up the color/flavor. Also, I reserved 1/3 of the cheese ( I used aged cheddar) for the top, which gave it a cheesy crust- yum!) My husband looked a little skeptical when I was cooking the vegetables down but he went back for seconds tonight and hasn't done that in months!
