Twice Baked Sweet Potatoes with Ricotta Cheese
Wonderful flavor. Made it in a casserole instead of twice baking the skins. The only change I made was to use garlic and finely minced onion instead of the shallots.

Shrimp Scampi Bake

Southwest Chicken
This is excellent! I cut my chicken into 1 inch pieces and we use this as stuffing for burritos or tacos. One of hubby's favorites!
