Linguine with Spinach and Brie
This was a good base recipe. I added mushrooms, sun dried tomatoes, crushed red pepper, italian seasoning and garlic salt (because of all the "no-flavor" comments). It turned out to be a really tasty dish that I'll definitely make again!

Gourmet Mushroom Risotto
We used a little onion instead of shallots, still fine. The mushrooms seemed like a lot at first, but the proportion ended up tasting great! I did have trouble making the timing work with the other things I was cooking, so I'm definitely going to plan it all thru next time I make this.

Eggplant Tomato Bake
I brushed the eggplant slices with olive oil and tossed salt and pepper on them as well. I didn't have enough parm so I added slices of provolone on top of some of the tomatoes, and those turned out really yummy. Dusted a little garlic salt over everything once out of the oven. Delicious! And wonderfully simple!
